Cinnamon Swirly GF SF Muffins

These are GOOOOOOOOOOD. And don’t judge my picture of the muffins on the left – I gave it a good instragram try and it, well, it’s very red. Oh well.

Recipe adapted from http://thenourishinghome.com/2012/03/cinnamon-streusel-muffins-gf/

2 eggs
1/2 sour cream or plain yogurt (full fat – go big or go home)
1 tsp vanilla
1/3 c. maple syrup
3/4 c. water
1 tsp lemon juice or one pack of Real Lemon

Whisk it all up and add:

2 1/2 c. Flour (I used Pamela’s Baking and Bread mix)
1 tsp Baking Soda
1 tsp salt

Fold the flour and liquid mix together.

For the swirl/filling/topping – mix in a small bowl

4 Tbsp Honey
1 Tsp + 1 tsp Cinnamon or pumpking pie spice combo
2 Tbsp Butter
1 Tsp Vanilla
(mix it all together)

PREHEAT YOUR OVEN TO 350.

Food Adventures and other occurances

It’s a good thing that I LIKE to cook. I enjoy finding new recipes. Creating new recipes. (re)Trying vegetables (I’m talking to you, brussel sprouts, beets, and cauliflower). Viddy and I are doing a … healthy eating plan/nutritional readjustment/diet.

Pretty much, we’ve cut out all sugar and grains for 6 days of the week and then Saturday or Faturday we eat WHATEVER we want. Well, almost whatever we want. I want a asiago cheese bagel from Panera, but my celiac tummy forbids it. So, Faturday means Stewarts orange cream sodas, chick fil a french fries, popcorn, carbs, carbs, carbs, and sometimes cake.

Chocolate Banana Flax Muffins

I found and then adapted this recipe during the first few weeks I was home after my c/section. Let’s just say that the medication I was on for pain had a side effect that was… um…. causing me to think about adding more fiber to my diet. Hence, flax seed muffins.

These are gluten free, dairy free, and refined sugar free. AND they taste GREAT! Or else I wouldn’t eat them.

Preheat your oven to 375.

3 mashed Bananas (very ripe, of course)

1/2 cup honey

1 egg

1 tsp vanilla

pinch of salt

1 1/2 cups Pamela’s Baking and Pancake Mix OR 1 1/2 cups Flour (regular for all you gluten people out there or a GF mix like Bette Hagman’s Featherlite mix)

1 cup milled flax seed (I get mine at Costco)

Gluten and a Muffin Recipe

Celiac Disease: an autoimmune disorder that makes my body attack itself when I eat Gluten.

Gluten: the protein found in wheat, barley, and rye that makes dough stretchy and bendy and chewy.

Cross-Contamination: the unintentional mixing or touching of ingredients that are naturally gluten free with those that have gluten (For example, the dried apricots from Costco – processed with wheat, don’t ask my why. Or mixing a batch of gluten free cookies with a mixer that has been used with wheat dough and has crevices for wheat to hide and sneak out and contaminate my cookies and make my stomach hurt.)

The problem: Any amount of gluten can trigger a ‘reaction’. Reactions can be anything from bloated general ickiness to puking to a couple days of unhappiness and lactose intolerance...
